Absolute care and attention from the very beginning to the very end - that's what defines artisanal ice and sets the standard for craft ice. By managing every aspect of the ice from the softening and filtering of the water to the controlled slow rate of freezing you can be sure that you're getting only the purest, clearest, hardest ice cubes and spheres possible.
The large ice blocks used for crafting our cocktail ice cubes and spheres are created through a slow freezing process to ensure optimal quality and the hardest craft ice possible. The blocks are created using water that is triple-filtered down to 5 microns to remove impurities and particles, aiming to guarantee absolute purity and clarity in the ice. Additionally, the water is custom softened to further reduce impurities and minerals, ensuring that the resulting ice blocks are pristine and free from any undesirable flavours, odours or mineral deposits.
This careful process of water treatment and slow freezing culminates in large ice blocks that not only look visually striking but also uphold the high standards necessary for crafting your premium cocktails.
Our craft ice machines are cleaned and sanitized before they are filled and the process is started. The water is custom softened and then passes through a triple filtration system. A charcoal filter removes chemical impurities from the water and then a two stage particle filter system removes any remaining impurities.
After roughly 100 hours of slow freeze the 400lb blocks of ice are carefully harvested using powerful lifting equipment. Any impurities that made it past the filtration system are concentrated in the last bit of water that remains and is drawn off leaving behind nothing but clear, hard ice, ready to become craft ice.
"Out of the frying pan, into the fire" - or in the case of craft ice, it's out of the block machine, into the freezer. After the ice has been harvested it's moved to a minus 20 degree freezer where it tempers for a minimum of 24 hours before processing into ice cubes and spheres begins.
