WHY CRAFT ICE?

Sometimes we all just need to sit back, relax and take some time to appreciate and celebrate ourselves and all we do. I certainly don't consider myself the "Cocktail King" but when I do take the time to stop and enjoy a special treat these magic little cubes have a way of taking that feeling of "you're doing good" to the next level. After all these years working with ice I'm still to this day mesmerized by the beauty in it and quite often as my refreshment nears the bottom I'll find myself enchanted by the sparkly gems still alive in the glass.

Mixologists and aficionados should agree that the last thing you want to do to a masterfully crafted cocktail or lovingly aged spirit is to dump a bunch of water into it. Large format craft ice minimizes the exposed surface area of ice which, when combined with the hard-frozen characteristics of our ice results in less melting which directly correlates to less dilution.


While the science has yet to conclude such it most certainly seems to me like it does. At one of the last gatherings I attended we were all quite struck by how long the cubes seemed to remain.


It is...but it also isn't. We begin with the same water you brush your teeth and make your morning coffee or tea with. But that's where the similarities end. We soften the water prior to entering our three stage filtration system. This removes as many of the chemicals, minerals and impurities possible before the freezing process. The rest of the magic comes from the ice block machines which control the freezing of the water such that only the actual water molecule freezes. Any and all remaining impurities remain unfrozen. When the ice block reaches our desired thickness the remaining yet unfrozen water is drawn out of the machine along with all impurites that may have made it past the pretreatment.


Our cubes have been melted down and tested for impurities and dissolved solids and the results came back 100% pure.


Well no. In fact the goal is to not make any change to the taste at all. The taste of your beverages that is. Our completely pure ice ensures that all your drink takes from the ice is the chill.


It does make your beverage FEEL better though. It's an interesting thing that happens when you treat yourself to something as simple as a sparkly little piece of ice. Whether it's in my smoky old fashioned, my summer mojito or just in my water glass, these little delights "feel" so special. Like we all are. So go ahead, indulge. You deserve it.


Not in the way the ice harvesters at the beginning of Frozen do, no. I don't walk around the shop with an eighteen foot long saw singing  an icy shanty. But otherwise yes – I do cut each and every cube one at a time.


The large ice blocks are cut down into progressively smaller and smaller pieces until they reach their final dimensions. This is done with a variety of tools from chainsaws to bandsaws. But the tools (or the ice) is all moved by hand. We do not use any automated machines in creating our craft ice.


That said, we DO have a super fun CNC machine but that's used strictly for engraving custom ice cubes.
